You know those chicken kievs you buy from the supermarket, filled with various artificial sauces and sludges and surrounded by chickens' bumholes and gristly bits all mashed up together? ... well, how DO they make them?

..not sure how Mr. Mattews makes his, but this is how I make mine...

1.chop up loads of garlic and herbs, mash into some softened butter with the juice and rind of half a lemon, lob it into some clingfilm roll into a sausage shape and freeze..

2. make a slit on the underside of a skinless chicken breast, take a chunk of the frozen garlic butter and stuff it in the slit

3. dip the chicken in beaten egg and then into some homemade breadcrumbs...then into the egg again  and finally into the breadcrumbs again (this is to make sure the butter wont run out during cooking)...

4. fry in a little oil to brown, and finish off in the oven..

...yummy....

Wow!  That actually sounds like it'd be within my capabilities too!  And much better than the gunky ones you buy .... cheers!
don't forget to flour the chicken first then egg and bread crumb, the egg sticks better to floured chicken ;-)
I do exactly as ermintrude, but I sew the thing closed with dark thread, leaving long ends to be pulled out when cooked.
