For more on marking an answer as the "Best Answer", please visit our FAQ.The stone in the mango is a flattened egg shape so what you do is slice down either side of the stone so that you get two pieces of mango (unpeeled), you may need a little practice to get it right to avoid wasting too much. Best idea is to start near the centre line and if you hit the stone then move out a littel. When you've got your two pieces you lay them skin side down and then gut a grid pattern into the flesh with about 1-1.5 cm between the lines, you need to cut down to but not through the skin. You can then turn the piece 'inside out' so it looks a bit like a lumpy hedgehog and then cut off the cubes of mango.
