I've been given a catering bag of sponge mix, I made a batch according to the instructions (just add water) but when cooked it seemed very dry. I made a bit more with a little extra water but it was he same. Is there any thing I can add to it like oil or egg or something to make it more moist ?

What are the ingredients? it must say on it.
The most common problem when baking sponges is leaving them in the oven too long! Simply reducing the time might well solve the problem. Otherwise try adding some butter.

Eddie, this is what it says - Wheat Flour,Caster Sugar,Shortening (Palm Oil, Rapeseed Oil, Emulsifier: Mono- and Di-Glycerides of Fatty Acids),Raising Agents (Sodium Bicarbonate, Disodium Diphosphate),Dried Skimmed Milk,Dried Egg White,Dextrose,Emulsifiers (Mono- and Di-Glycerides of Fatty Acids, Polyglycerol Esters of Fatty Acids)
Buenchico - I don't think it's the baking, I do quite a lot of cake making and wouldn't normally use a mix but I've got 3kg of this stuff gratis and I'd like to make use of it.

Thanks Woof, this one is basically a just add water mix but I think adding an egg and mabe changing some of the water for milk might help make it more palatable.
just had another thought, try using it for moist desserts like trifle, tiramisu, icecream cake and so on.
