Not an exam Tony just trying to get some inspiration for different dishes for a friend who has dietary constraints.


Right I see Eccles, trying to give your friend some variation.

Sloopy, high in grains and carbs, all veg must be cooked and overall low in fat.

I have peculiar loathing of rice salad but at least with a curry kick I might be tempted......and that one doesn't look as bad as some of the heinous offerings I've encountered. Thanks Shoota

I love tabbouleh but it typically has raw veg and herbs running through so isn't suitable for this situation :-(
Tricolore is nice. Avocado slices/mozzarella/tomato slices
Not seasonal now but roast parsnip and chestnut salad, drizzled honey (or some cut maple syrup and basalmic) with rosemary and thyme, brilliant with lamb chops......
I love it, and you can put virtually anything in it.....
Couscous with roasted peppers and courgettes is yummy. Don't often make it but have eaten it at a party and it was delicious.
and if you do want a summer theme, cut some mixed salad leaves and watercress through it....yum.

Tricolore and mixed leaves/watercress are both raw :-(

I can see couscous and roasted med veg featuring.

Roasted parsnips make a lovely salad DTC, I make one with walnuts and a sherry vinegar dressing but as you say it's not seasonal and I do like my seasons :-(

I'dgo with yummly as well, most of the raw veg here can be steamed or roasted instead

roasted squash, red onion and mozarella salad, touch of parmesan, served with warm flatbread or naan. Could make a spiced cannellini dip?
Rice served with lightly steamed chopped green beans with fresh or tinned apricots in juice also roughly chopped makes an interesting salad. If appropriate fresh chopped mint leaves may be added.
I really like delia smiths baby summer veg with lemon vinaigrette. All the veg are steamed and you can add or subtract any you particularly like or dislike. It's nice cold or warm.
I love couscous, particularly if it has pine nuts or something a bit crunchy in it along with tangy bits like juicy sultanas, dried cranberries or chopped dried apricots.
Roasted Mediterranean veg always goes down a treat in this house, warm or cold.

What do you dress it with Daisy?
One of my favourite grain salads is Chopped cooked beetroot with roasted peppers, cous-cous and lashings of Horse Raddish (Fresh Grated or Ready prepared as a sauce).
Another goody is chopped spinach with cold plum tomatoes, boiled cold baby potatoes and a squidge of mustard mayonaise - all served with baby leaves - yum!
Why does it need to be cooked? Is it to break down the starch or something?
