Having grown 11 plants (5 green, 6 yellow) on my allotment, i have the European Courgette mountain at home. Sometimes im picking up to 20 a day...usually around 5-10 though.

So i've shallow fried them, grilled them, griddled them, barbequed them on a mixed kebab and put the in a curry. I also stir fry them in balsamic, honey, garlic and ginger with mangetout, onions, peppers and mushrooms

Any other suggestions....apart from soup ??

Ive given most away to friends and family

Grate 2 and leave in a colander to dain a smidgen.

Finely chop a chilli a few mint leaves and a clove of garlic. Put in a bowl with one egg and a TBS of flour, season and whisk, add grated courgette and stir to combine.

Heat some veg oil in a frying pan and cook a tbs or so of courgette mix turning when golden.

Serve with tzatziki, yum!

Hee, hee I've done that before! Now I've learnt that despite everything and my overwhelming desire to grow more, three plants is more than enough for us two!

You could make a ratatouille and freeze it. You could make more curry and freeze it. You could make courgette cake - delicious. You could have a look here for more ideas....

When I lived in Canada they were grown profusely and were known as zucchini which I guess is the Italian name. Might be worth while googling them by that name. You might get a new angle? We use them mainly in stir fry dishes where they absorb flavours.
Tempura. Yum.
Courgette flowers are wonderful to eat either raw and stuffed with cream cheese or deep fried- seriously not a joke, one of my favourite delicacies.
Make a huge ratatouille and freeze.
Thickly slice some yellow ones, place in a baking tray and sprinkle with a little olive oil and steak seasoning (from a jar/ packet) then bake for 15-20 mins at about 180. Lovely jubbly, goes great with chicken.
In the bin for me....not a huge zucchini fan - will eat them though, usually a tad of steaming and then in a hot pan to sizzle, garlic, herbs or even some mustard seed - and they have to be fresh, as in hammerman picked.
If you have a julienne peeler,turn them into courgetti...like spaghetti. Steam with garlic,chilli and olive oil. I don't care for courgettes that much,but this I love. You can also make a courgette cake...never tried it though.

Put a tray of them outside your house with a "help yourself" sign - I did that today and they disappeared in a trice.
Cut up fine with a mandolin with equal number of carrots. Stir fry in mixture of butter/ marge and oil until just browned.
Wipe and slice lengthways. Put into a cooking dish then make up some Bolognese sauce pour over courgette. Cover and bake until courgette just about cooked then uncover and sprinkle with cheese, return to oven until bubbling. Serve with garlic bread. Yum yum.
