Anyone got any ideas for easy, cheap meals that I can make in a caravan? Given that everything is mini sized and there are seven of us I can't make what I would normally at home. My mind's gone completely blank. PS - I'm not bothered if it's healthy or not, it's only for a week.

Definitely take a slow cooker, worth it's weight in gold. Chuck the food in there before you go out and it is ready when you come back in. Use packet mixes with mincemeat, sausages, chicken portions etc. and throw in some chopped veg if you have some around. Serve with plenty of bread. Chilli, curry, etc also smell appetising when you come in!
My Kids favourite camping food was Spam curry, they still ask for it now and then when they come home.
Sounds awful but surprisingly very tasty.
Cook a large pan of rice.
While the rice is cooking, finely chop an onion, chop a tin of spam into small cubes and open a tin of mexicorn, (or sweetcorn if you cant get mexicorn)
put onion spam and corn into a wok and fry gently,
drain rice well and add to wok.
make a pan off curry sauce,
Most butchers sell a curry sauce mix which you make by adding water, or half water half milk. its quite tasty and has littke bits of apple onion and raisins in it.
Serve stir fried rice with a spoonful of curry sauce over the top. Always goes down well.
You could swap the spam for chicken or any other meat, but the spam is surprisingly tasty when it is fried and added to the rice and cheaper than chicken. X

It depends on the facilities you have. On the most basic level ie just gas rings, then it would be tinned and 'just add boiling water' stuff. If you have mains electric and a microwave then you have a few more options. Basically you just want to be reheating stuff as caravans aren't the place for culinary marathons, no prep space an even less cooking area. If you have the weather and access to a BBQ make plenty of use of that. Tinned stews, curries, soups etc are always a good standby and if you can fill them up with lots of crusty bread.
