These are quite expensive to buy in small packets. Has anyone any experience of using dried apricots, to soften them but not make them soggy?

Yes - get some dried apricots, then pour hot but not boiling water over them leave for 4 mins then give them a rinse off as the preservative chemicals will make the water muddy. Then repeat the warm soak giving a squeeze every few mins to see how they are. One of those things that are hard as a rock one second then very soft the next. If you want to move quickly though, wash the dried fruit in warm water. as above pat dry and then using kitchen scissors cut into little pieces. Yum yum.
