Can I Freeze Stem Ginger?
I've just opened a jar of stem ginger for a recipe and only used two lumps. It says I have to use the rest in six weeks, but I might not. I know you can freeze grated fresh ginger, but what about stem (in syrup at present)? Please advise!

Keep it in a cool place, not the fridge, and make sure that you only ever take the ginger out with a clean implement. Small particles of other foods are one of the causes of mould growing on preserved jams and other foods. My jar is at least two years old and absolutely fine.
