I have no idea what human flesh tastes like. I have eaten horse meat though and it was okay.

The only time I've eaten human flesh I found it to be greasy, stringy and lacking in any definable flavour. Perhaps boiling the meat from a human arm isn't the best way to cook it though! (Medical students might know a great deal about medicine, and how to steal a limb severed in an accident, but they're lousy chefs!)

How does he know it tastes like human flesh unless he's tried human flesh? "...first hand accounts of cannibalism to get the flavour as close as possible..." doesn't quite work for me.

Cannibals are supposed to have referred to human meat as "long pig" because they apparently thought it tasted like pork. So try a pork-burger.
