Sorry if this sounds stupid, but it there an easy way of de-coring kidneys ? Whenever I make steak and kidney I always seem to waste a lot of kidney (I cut off each end, and then, gripping the core itself, cut another slice from the top. I have tried to cut out the core, but because you can't see where it is, I don't always get it out.

What I do is lay the kidney flat on the chopping board, core to the left, (I am right handed)take a very sharp knife and cut around the edge of the kidney to expose the core but not cut through it. I then flap it open and using kitchen scissors, I carefully snip out the core at each of its attachments. It takes a bit of practice but you can get maximum kidney for minimum core that way.
