why do butchers/slaughterhouse workers use a single chainmail glove?

just a thought, but could it be because the other hand holds a big knife!!
It certainly is!  Think about it - how often have you, when using a sharp knife, cut the hand that's holding it?  No, I thought not.........
serious question. Does anyone know where I can buy one?
I would try protective workwear shops - especially if you are anywhere near a big wholesale market.  Failing that, your local butcher should be able to tell you where they get theirs........

i thought that it may have been for some hygiene reasons(but that seems unlikely)
They would also wear what is euphimistically called A Knacker Pad. Usually a thick leather short square apron worn under a normal apron. Again just in case the knife slips.
