The “pulled” meat phenomenon (sometimes a scam) is one of the great mysteries of our time.
As I understand it, meat that has already been “Pulled” has been removed from the bone and shredded (rather like your local Chinese restaurant shreds your quarter of crispy duck before your very eyes). This gives less conscientious processors the opportunity to offer “mechanically reclaimed meat steamed from the carcass” (i.e. the shreds that are left on the bones after the proper meat has been removed) as “pulled” meat. I once saw a “Chicken Kiev” that had been made from “meat” obtained in this way. The shreddings were compressed together with some sort of edible glue to give the appearance of a chicken fillet. A food analyst soaked the product in warm water for a few minutes then poured the solution through a strainer. Almost all the solution passed through the strainer with very little solid material remaining.
I fail to see how the product you bought, Caran, can be described as “pulled duck”. You basically bought two duck legs and you’ve got to pull them yourself after you’ve cooked them! But at least you know they were whole duck legs to start with.
