I love it but some recipes are better than most. My favourite is Tripe a la Caen which is quite simple and has more flavour than our old tripe blanched in milk with onions recipe but then I suppose there wasn't much else on ration to tittilate the taste buds. A la caen is simple if you want the recipe.

When I was growing up in the 50's and 60's, my brothers and I had no option but to eat what was put in front of us...clean plates were the order of the day !
But us boys and Mum all banded together and rebelled when Dad cooked tripe for us...he only did it once and never again !
Our Boxer dog loved it though, although it made her fart something awful !

Tripe is really good for poorly animals, especially dogs. My music teacher used to buy it from the local butcher just before my piano lesson. She kept showing it to me, explaining the different types, how to cook and eat it etc. (lots of vinegar seems to be essential for humans). I'm afraid I always chickened out - even of Tripe a la Caen! (I'll eat snails though - running for cover now!)
