Can you cook pasta drain it and re-heat it. I worked in a resuruant years ago and they would do this by coating the cooked cold pasta in oil.can this be done?
I cook the pasta to al dente then rinse thoroughly in cold water and leave to drain really well, then put it in the fridge - I would then reheat by plunging into boiling water.
yes you need to add oil to stop it sticking, about i tablespoon for half a pack of pasta. You can reheat it in the microwave if you have one or if you are serving it with sauce just heat the sauce and mix it in.
When I boil pasta I first add a small amount of olive oil to the water. Then I drain it and put oil, butter and minced garlic into the pan over a low heat, put back the pasta and stir for a minute and then allow to cool. When the pasta is cold I put it in the fridge. Reheats in the microwave just fine.
