As a T2 diabetic on tabs and insulin, is it best to have my potatoes mashed or plain boiled?

carbohydrate either way !
Try cauli mash. Far less carbs and tastes yummy.
The answer depends on what you add to the potatoes in either case.
Sweet potatoes instead?
The carbs in sweet potatoes are the same as white potatoes.
But the glycemic load of a sweet potato is much better and a yam even more so.
There's no difference between mash and boiled, if you eat potatoes with the skins on that helps because the fibre helps reduce the glycemic index of the spud however assuming you're eating some protein and fibre with the rest of the meal I doubt there would be any difference.
