Simply arrange thin slices of cucumber around the poached salmon, to look like this: http://www.2gourmaniacs.com/wp-content/uploads/2012/01/poached-salmon.jpg Recipe here: http://www.bbc.co.uk/food/recipes/wholepoachedsalmonwi_93188
Only two answers, and Chris nets BA. On the scale of things it's a total travesty I tell you; a total travesty. But I won't intimate that there is something fishy in that coz I'm not like that at all, I'll have you know.
Au contraire. I must disagree, I have no idea how you can tolerate it. Cucumber is awful stuff which pollutes anything it touches with it's water carried taste. (Not to mention scent.) Salmon is a wonderful foodstuff, such great flavour. Putting one on the other is an act calculated to make great food untouchable. It's just so sad :-( Please don't do it.

"It has been a common saying of physicians in England, that a cucumber should be well sliced, and dressed with pepper and vinegar, and then thrown out, as good for nothing."
Boswell: Journal of a Tour to the Hebrides
I'm not a great fan of it myself.
