I par boiled my pots last night prior to roasting today. But half of them have gone dark and marked. Whats wrong with them? Safe to use?

Did you keep them under water?
Perfectly safe to use.
They'll be fine, the dark patches won't show through if well roasted.
I thought that ALL partly boiled potatoes left out, go brown.
It's called oxidation.
Exactly, unless you have a vac pack gadget the air gets at them - will roast up nicely though.

I pop them in large freezer bags and get as much air out as possible, it does minimise the problem.

Chris if you keep par boiled under water they'll be saturated, you want a dry spud to roast.
I get surprisingly good results using canned boiled potatoes (dabbed dry with kitchen towel), Mamyalyyne!

I'm sure you do , they spit like mad I bet though.

Another way to avoid the problem is to par boil, roughen up and roast in hot fat for 10 mins then cool and remove from fat - finish the roasting the next day.
Yes Mamya, they spit horrendously!

Anything you can half-cook, then put in the fridge, saves enormous amounts of time next day. That's if you've got any room in your fridge - the one here is bulging at the rivets!
