I've recently bought a chest freezer which doesn't really have much in it at the moment. I have a massive food shop being delivered tomorrow and much of it will end up in the freezer.
Just keep a list in a note book and cross off as you use it. Not that I do, I never really knew what was in mine and often found stuff at the bottom that I had forgotten about!!
I printed-off an A4 sheet with a list of what we freeze and a box for how many we have and then laminated it. As we fill it we write numbers on it with a plastic-pen and then wipe-off and correct as we use items.
You usually get one, possibly two, baskets with a chest freezer. The very first thing we did (many years ago) was get six baskets (it's a large freezer!) from these people....made-to-measure to make use of every bit of space. An absolute must, if you want to remain sane!
I bought a load of those large freezer bags from M and S. they stand in the bottom of my chest freezer and I have one for dog stuff, one for human meat and fish, one for fruit and veg and one for carbs. In the bit that sits over the compressor, i keep ready meals, and in the three hanging baskets, I keep open packs of stuff and things like frozen butter. i don’t need a log because I know where stuff is.
I had big plastic tubs in mine- one for meats, one for veg, one for puddings etc...made it easier to lift each tub out rather than having to almost climb in the thing to paw through everything.
I have a meat box, a fish box, a veg box (just ordinary cardboard boxes), breads slot down in front of them. 2 top baskets hold soups, home-made ready meals, oddments etc. I know what's in all of them.

Whenever I get a new freezer (am on my fifth over 40 years) I always plan to organise it and make lists....I never do. The bag thing works well for me :)
