For some reason the last yr or so whenever I make this it just doesn't rise - barely at all. I've tried different tins - metal baking dishes/glass ones/ceramic. I've made the batter up and let it stand, then tried making it up and using immediately, I've tried oil to heat up, lard.......
Sooo does anybody have an absolutely foolproof way of doing it, including what dish you use. Thankyou muchly !!!

2 eggs - so about 300ml of milk and same of flour I think? That James Martin r pie uses eight eggs!!

I use 100g plain flour, pinch salt, 1 egg 250ml milk. I use a large chunk of lard in a ceramic/pyrex dish and the oven is at Max and when lard is melted and smoking lob the mix in. Always rises.
Smow - I only use half-quantity (only 2 of us). It works!

Well it was alright in the end. I was so determined to get oil as hot as Poss and not open oven door that it burn a tad round the edges but it did rise
