what way to spice these up a bit , i usually bang them in oven with garlic and butter.

ideas please. simple ones .....thanks

Chilli, lemon, garlic, thyme.

Ground cumin, honey, garlic, lemon, white wine added at the end if you wish to create a sauce. A splash of cream at the very end doesn't go amiss.

Curry paste, Indian/Thai/whatever you fancy mixed with yogurt.

Pesto red or green.

Soy, ginger and chilli. Maybe serve with satay sauce.

Goujonise them, crispycrumb coating with sweet chili dip...
Nip down to your local Asda, Tesco and get a jar or packet of Piri Piri.

Bash them to flatten. Mix herbs-chillie,lemon thyme,garlic salt,pepper- with a bit of flour or cornflour. Dip the fillet in to cover. Fry gently in butter...turn over...fry for another minute. Top with mozzarella( not the cheap sort),spoon pan juices over,turn heat all the way down,and cover with pan lid until the cheese is melted. Alternatively,put the pan under a medium grill to melt the cheese.

Honey salt pepper oregano and a wee suppy chilli powder mixed with some olive oil them left to marinade, come out sweet and sticky with a wee bote of chilli. Delish!
