Just made it and very nice it is too.
I added a small tin of sweet corn, and couldn't get pistachio nuts so put half and half macadamia nuts and pecans, chopped up,which I happened to have in.
I used medium curry powder but think I'd use hot if/when I make it again, as there's a lot of cauli I think it needs a bit more depth.
The texture is great, it doesn't taste of cauli at all..not that I'd have minded if it did. It really is like couscous or fine rice, himself is currently tucking into a bowl of it with his lunchtime sandwich.
Definitely one for my recipe folder :)

Another slight change I'd make Ummmm, is either a bit more vinegar or a bit less maple syrup in the dressing, it could be a tad too sweet/not tangy enough for some. Overall though, I'm sure you'll enjoy it.
Over rule the boy and make it today! ;)
Thanks for the feedback, ethandron. I will definitely make mine less sweet and more tangy.

I might even omit the pomegranate as I'm not overly keen on them.

That's the beauty of something like this NoM, and recipes in general, you can tweak them to your own taste. The texture is really good, something to really get your teeth into. To be honest, there aren't many Pomegranate seeds init compared to the amount of everything else, the red just makes it look nice.
I'm going to try just plain whizzed up cauli and use it instead of rice with something, I believe you can freeze, it and it heats up well.
I make a big tub of mixed couscous about twice a week..cauli,broccoli,courgette,shallots or spring onions,maybe a bit of carrot or red pepper. Keeps for several days.
And do you lightly sauté each time, Pasta?
Yes I do,NOM...and I use different seasonings according to what I'm serving it with....from Morrocan\Middle Eastern to butter+spring onions. It's very versatile and quick.
So for the James Martin recipe, would you use raw pistachio nuts or would you be tempted tightly roast them first?

I'd use them raw, not being a fan of toasted/roast nuts.
Unfortunately, I don't use nuts...they make my mouth feel itchy.
But...I'd use sunflower seeds...and roast them first. They would be nice and crunchy,and the flavour would be better.
Pasta freak..if nuts make your mouth feel itchy then you have a nut allergy ..so you need to be careful... This is how it starts for my daughter - her tongue gets itchy her face swells - well you get the picture, not a pretty sight..
