The rhubarb has gone mad! It won't be cookable for much longer and I could do with any ideas other than cook it to 'crumble' state and then freeze. Thanks for anything. :)
jourdain, if you wash it, cut into chunks, place on baking tray lined with parchment paper, place in freezer, when frozen after few hours, place in freezer bags, this is what I do, you can store it up to 12 months and if baking, just take out as much as you need. there's no waste this way.
My Grandad used to make huge quantities of Rhubarb wine. It was quite amusing as he was a strict methodist and would not touch alcohol. His Rhubarb wine would blow your head off, but he always refused to accept that it was alcoholic!. ''It's just Rhubarb and sugar'' he would say, unaware,unable or unwilling to admit it was about as strong as sherry! Tasted great though! Try brewing some.
I made rhubarb and ginger jam and rhubarb and vanilla jam this year. Both were delicious. Just google it, there's loads of recipes out there! I've also done the cordial wolfgang mentions. It was lovely - as long as you don't have too much of it!!!
When me and my sibling were kids, Mum used to give us a bag with sugar in (!) and we would dip sticks of rhubarb in it and eat it like that! Ughhh the thought of it now.
