Melon Tastes Slightly Fizzy!

I bought pre-cut melon from m&s with a use by date of today. It's been kept in the fridge since I bought it. Just opened it now and it tastes slightly fizzy! I take it this means it's off but if so, how? It wasn't previously opened and left and it's still in date (just)?

It's fermenting. Melon wine being made. :-)
It's safe to eat, by the way.:-)
But don't drive afterwards.
It's not really off just started to ferment like wbm says. these use by dates are not a specific science and it's also been hot this week, even getting warm in the car coming back from the shop could start it off. i think you've just been unlucky.

I did eat half of it still mind, didn't taste that bad, just different! Alcoholic melon, now there's a thought lol!!
....one of the disadvantages of buying pre-cut fruit or veg - starts to deteriorate as soon as it's prepared/cut at the "factory"...because air gets to all the cut surfaces. Not to mention...it costs a lot more when somebody else cuts it!
