Lamb Shoulder Fillets

I have some lamb shoulder fillets.
My wife wants them roasted.
Any suggestions please on time and temperature?
Wrapped in foil to stop them drying out?

If overcooked it will dry out, so roast it for a short time only (sear in a hot pan first), or pan-fry, grill it and serve pink in the middle. Noisettes are best pan-fried or grilled for a few minutes.

If I wanted to cook them in a slow cooker instead of roasting would that work?
Oh yes absolutely and lovely and tasty too.

Ok thanks I will slow cook them. How would you do it in a slow cooker?
I would brown the outside quickly over a high heat with a little oil, pop in the slow cooker with selection off veg, potatoes and a glug of red wine, stock cube and some water.

Leave until cooked, thicken with thickner of choice.

You can even add dumplings if you wants.
Lamb fillets aren't really "slow-cook" cuts...better quick-cooked ie fry or grill.
...you say "shoulder fillets"....sorry, never had them....so disregard my first comment!
They cook well either way, I pan fry for 5 mins and then roast on a high temp for 15mins so they are nice and pink in the middle.

They are a proper treat either way.
