Otherwise keep it simple with fish. Grilled sardines (fresh, from the fish counter, not canned!) only need to be served with some olive oil and decent bread to provide a great meal. (Add a mixed leaf salad, using the stronger flavoured leaves, if you want to though, possibly with some lime pickle).
With most foods, microwave cooking is regarded as a poor substitute for 'doing it properly' but with some types of fish microwaving is the
best way to cook them. Try whole trout (of the 'serves one' size), with the skin slit in several places, in a microwave oven for around three minutes. You end up with lovely moist flesh, which is really tasty. (Serve with a mixed leaf salad, using a honey & mustard dresing or just with some good quality new potatoes).
