I realised we had a tonne of mince in the freezer down in the cellar so I've got it all out and now I'm planning to make a mega hot chilli for tonight, a lasagne for tomorrow and a cottage pie for in the week.

What's cooking at yours this weekend?

We tend to eat out at weekends.
We've had veggie burgers for breakfast.

Tuna steak with pineapple salsa for dinner.

My freezer is jam packed so I really need to start using it up.
take-away tonight, then making a chicken chasseur for tomorrow night.
Question Author
I haven't made chicken chasseur in ages!

Pineapple salsa sounds nice. I do like mango salsa.
Nothing...I'm coming round to yours NoM!

I'm at OH's so will be out for dinner tonight and I haven't a clue what's on menu at home tomorrow.
As there is only me to cater for I think it will be a super speedy and simple chicken wrap with lettuce and salsa, a posh KFC! Followed by a couple of nectarines.

Tomorrow is likely to be the same just to use everything up.
I've bought some mango as well :-) Just waiting for Tesco to arrive.
saag aloo with beef for me
Chicken madras for him
home made naan bread
slow cooked pork shoulder for tomorrow with a diet coke sauce
Question Author
Hmmmm.... nectarines. I've had a bee in my bonnet recently about them.

QoM, plenty of room at the inn.
ooh, Islay, am intrigued about the diet coke sauce.
Any chance of sharing the recipe?
pretty please? xx

Ummmm, You've just reminded me that I've got a Tesco gift card to use.
I too have a bee in my bonnet about nectarines as I accidentally picked up a pack of peaches this week. I spent an age with a Bic razor de fuzzing the furry horrors!
Question Author
Im not so mad on peaches, but they probably make a nice chutney.
LOL, that's quite an image Eccles ! x
What was wrong with a potato peeler to get rid of the skin? :-)
I had nothing better to do Alba :-)
could have been worse, you could have sat there with tweezers de-fuzzing the offending fruit :-D
Can of diet coke, 5 tablespoons of passata, teaspoon of garlic salt, several shakes of Wshire sauce and a splash of soy sauce.
If doing something like slowed cooked pork, pour all ingredients in and then when pork is cooked pour off all juices etc into a pan and boil to reduce to desired thickness.
oooh, thanks Islay. xx

Will give that a try and see if it doesn't convert the pork dislikers of the family :-D
I also do chicken in it, put it all in a pan, add the chicken breast, poach breasts till cooked and remove. reduce sauce to desired thickness ( I like mine really thick) then pour over the chicken, this is really nice with roasted veg.
I could fit a kitchen in a whole day ... what you messing about at?
