I quite often cook Sunday Dinner for the in-laws and I like to vary the vegetables.

I will often do things like peas and pancetta, creamed spinach, cauliflower purée ... etc. I've managed to convert MIL with sprouts and chestnuts!

I would like some new and interesting ways to prep veg and would be grateful for any suggestions. TIA.

Cauliflower tempura is lovely, Tony. Not apt for Sunday dinner but a great accompaniment for, say, steak and peppercorn sauce.
New potatoes: cut across them about halfway down every 4/5mm (imagine an egg sliced halfway on an egg slicer) and add olive oil or whatever and roast in the oven. With a little practice they can be very attractive.

Yes, I've just looked them up and added to my culinary education....
I like them with mixed herbs.
My mum makes the creamiest most wonderful sprouts, mashed with salt, pepper and believe it or not tinned Tip Top!

They are soooooooo good!
