One Pot Non Spicy Ideas Please

We have visitors coming to stay for ten days shortly. In these circumstances I like doing one pot meals as I can just chop everything up, bung it in the oven and not have to faff around or disappear into the kitchen.
One of our guests can’t eat lamb or pork. Or tolerate any kind of heat or spice because of a medical condition. Creamy sauces are very much enjoyed but not essential.
I’d really appreciate some ideas, winter casseroles just don’t seem right in July...

Traybakes...not so saucy as a stew or casserole, but perfect for ease of preparation.
I used to do one with roast Mediterranean veg, baby potatoes and cod.

What I do sometimes (with a slow cooker but you could use a casserole dish) is put chicken breasts in (skinless) with sliced carrots or other veg of choice and then cheat with a tin of Heinz cream of chicken soup mixed with a bit of diluted knorr stockpot and some white wine in a jug then I tip that in. You can use herbs of choice (parsley or tarragon) and some garlic if you wish. If you want to be really lazy and the pot is large enough, you can tip in some baby new potatos or tinned potato.
