Has anyone ever made sherbet? Particularly raspberry flavour?

How successful was it? Care to share a recipe with me please?

If you mean sorbet I've tried this with the addition of a good slosh of vodka which prevents it from going rock hard in the freezer. I've only tried it with an ice cream maker.

5 cups of fresh raspberries
1 cup water
1½ cups caster sugar
1 teaspoon vanilla extract
1-2 tablespoons of fresh lemon juice
INSTRUCTIONS
Add water and raspberries to a food processor. Pulse until mixture has a smooth consistency.
Place a fine mesh strainer over a large bowl. Add pureed raspberries to the strainer (1/4 at a time) and press with the back of a large spoon or a rubber spatula through the strainer to remove the seeds. Repeat with remaining raspberry puree. Discard anything left in the strainer.
Add sugar, vanilla, and lemon juice to the raspberry juice in the bowl. Whisk until sugar is dissolved.
Freeze according to your ice cream maker's instructions.

Thanks moggy, but I meant sherbet!

Mamy - thanks. I'm not sure what jelly crystals are! I've got some Agar agar, I wonder if that might work.

Rockrose - That sounds nice but I wanted the powder. It's only cos I am poncing about doing posh stuff for Mr BM's birthday tomorrow.
