Portion Sizes For Smoked Salmon
6 Answers
Hi Foodie ABers out there, got a question for you. Mr. Chox and I will be doing most of the thinking (and part of the food preparation) for our social group's sit down summer supper in early July We want to keep things as simple as possible, so for the starter, we're thinking of doing a small plate of smoked salmon with some nice bread per head. We will probably purchase the side of (pre-sliced salmon) from our local wholesale outlet. Can anyone advise us as to a rough portion size per head, please? We don't really want to over-buy, although won't mind if that does happen because the left-overs can always be frozen ... hope you can help, many thanks, cheers, Chox.

If you are buying sides, then 850g Sliced, unsliced side, enough for 7-8-people
975g Sliced, unsliced side, enough for 9-10 people and 1.1kg Sliced, unsliced side, enough for 10-12 people. Remember whole salmon tends to have the skin on!
Peat smoked is well worth seeking out. A nice bread, lemon wedge, black pepper, a light chutney and some raita go with it well.

Thanks for all your help folks. We've got a small portion of some fresh salmon that I cured myself over the Christmas holidays, lurking in the freezer somewhere and which needs to be eaten up really. Will plate up a 75g approx portion. Wonderful suggestions peeps. Our group can be rather gluttonish, so will get a little bit more than necessary, for those requiring seconds! Which they always do! Thanks, too, for the ideas of accompaniments - was also thinking of a small portion of a lightly cured cucumber pickled (very thinly sliced) and marinaded very briefly with fresh dill. I do like the idea of a blob of cream cheese and sliced red onion! Many thanks again folks, cheers, Chox.
