Very very simple fish pie for 2

Buy 3 of the frozen cod or coley portions. You can get these cheap from the supermarket freezer section (coley is cheaper and just as good in a pie) Defrost it thoroughly. Then cook it by putting it in the microwave for a few minutes. Heat a dozen large prawns, a can of campbells condensed mushroom soup (do not add any water as you need it thick to use as a sauce) and some chopped parsley gently in a saucepan to warm them through. Break the fish into large pieces and fold into the mix (so you don't break it up too much) Cook some potatoes and mash them up with milk, butter and bit of black pepper. Place the mash on top of the fish mix and place the pie in the oven for 40 minutes!

Yummy and easy!!!

Take a half pound of white fish (cod haddock etc) and a half pound of smoked white fish, simmer gently in a 1/4 pint of milk for 5 minutes, remove fish and flake it into an oven proof dish, removing any bones and skin. Make a basic white sauce using the milk from the fish and add some cheese (cheddar is probably best) add some parsley and black pepper and pour over the fish. Mash a pound and a half of potatoes and spread over the fish and sauce (like you would for shepherds pie) sprinkle with cheese and bake in a hot oven until golden brown. serve with fresh crusty bread, peas and a bottle of white plonk!

a couple of pieces of white fish, a tin of salmon, a handful of prawns, a piece of smoked fish and a tin of tuna. defrost the prawns, break up the tuna and salmon. cook the white and smoked fish in a little milk in the oven. when cooked break the fish into largeish chunks. make a parsley sauce with the fish milk, adding a little more if necessary. Mix it all together and top with mashed potato. Bang in a hot oven until golden brown. Mmmmmmmmmmmmmm delicious!
I'd go along with a lot of the above - but don't use coley; feed it to your cat, or possibly curry it, but it's far too strong a flavour for a fish pie. It has no delicacy, and has all the worst points of both white and oily fish with few, if any, of the good ones. There's a good reason why it's cheap! Use cod, haddock, whiting, hake if you can get it, plaice ( a bit strong but still ok)......and definitely include some smoked fish; I always use undyed smoked haddock.
