We made one of these today, with olive oil instead of butter, and sandwiched with lemon curd and lemon buttercream, covered in lemon buttercream too.
OMG, it’s the best cake I’ve ever eaten.

Oops, forgot to mention, we made the Christmas puds too.
And last week it was a very rich chocolate cake, also made with oil instead of butter, filled and covered with chocolate ganash.
Something about making cakes with oil makes, and keeps, them very moist.
Where's the recipe then ;-)

I made a cake once.
When I used to bake, I used oil about 75% of the time. I thought it was an American thing.
