I expect service that I would provide if I was in the profession no more no less. If less, maybe a complaint if more, maybe a word of recognition to their supervisor.
I'm an average person who goes to average restaurants, I won't tip a man £50 to get me to a table faster or for a better table, this is the UK.
If money should't be all that to me when tipping, then why is it all that to the waiter?
I need that 13% just as much as the waiter and if the food was 13% more expensive i'd probably go elsewhere anyway.

You've either never been anywhere where it is been done by an unskilled person or (more probably from your remarks) never been anywhere where it is done properly by a trained person. I doubt Pizza Express train their people to a very high standard (if at all) but you can believe me or not when I say that there is a considerable difference between being waited on by someone who has been trained and is skilled and someone who has "applied online" and seemingly been told to get on with it. And it always shows.
