What could I do in my new pan that I could maybe finish off in the oven?

Obvious choices are veg and meat of course

biriani, all kinds of oven tray bake. tarte tatin type things both sweet and savoury

Biriani would mean i'd have to go to the shops and but a load of herbs and spices that i'd only use once then they'd sit in my cupboard till they went off
And fish. That's it really, you can't use them to make sauces.

Cast iron is brilliant though.

I use this, its very tasty, all "real" ingredients and no waste
Get a bag of frozen baked Mediterranean veg and sauté in your pan with some olive oil until soft, make two ( or four) holes in the veg mix, break raw eggs in and put pan in oven until whites of eggs are set -you can cover eggs with cheese if you like. If you don't want to eat eggs then sprinkle with haloumi cheese and bake until golden brown.
One of our favourite meals is very similar to that one Aunt Polly, except we just use peppers and onions and don’t put it in the oven to cook the egg, just have it on low on the hob with the lid on.
In fact, that’s our evening meal sorted, I have a load of peppers need using up :)

I am going to buy a normal cast iron because I only have one with a griddle and I really want to make Creamy Tuscan Chicken

I got a set of three cast iron pans from Amazon. You have to get used to them though. They retain heat for a long time so it's very easy to overcook things.

My skilelt is ribbed Ummmm, Would that make a difference when doing thinks like creamy tusk chicken?
Ie, sauces?
TheDevil Have you bought this pan yet? there is no reason at all why you can't do that recipe with an ordinary frying pan ,you do not need a cast iron one. In my experience they are heavy difficult to clean and go rusty if you don't use them regularly.

I don't use them...too heavy for me now unfortunately.
I agree with apg.
I got rid of my heavy pans for the same reason. the folk who I freecycled them to were delighted but much too heavy for me...to be honest, while they were posh, i don't miss them at all.
I find these sorts of pans very useful
