Cauliflower Cheese

Can I prepare the cauliflower and sauce and leave for a few hours before cooking in the oven? I'm cooking the Valentine dinner tomorrow and cauliflower cheese is her favourite accompaniment

You certainly can, either cool them separately or if assembling make sure the cauli is well drained.
