So so easy, and was so gorgeous and moist. The boys literally wolfed the whole thing down within hours..... lol

I don’t normally make cakes but I had some very over ripe bananas to use up.........

I’ll find the recipe and post it - was literally so so easy to make.

140g butter
140g caster sugar
2 beaten eggs
140g SR flour
1 tsp baking powder
2/3 v ripe bananas - mashed.

Heat oven to 180.
Butter loaf tin
Cream butter and caster sugar together.
Slowly add the beaten eggs and bit of the flour
Fold in rest of flour and the baking powder and mashed bananas
Pour into tin and bake for 30 mins, or until u put knife/skewer in and it comes out clean.
That’s it!!

Served sliced on its own or with butter on!
Tip
sprinkle some demerara sugar on top before baking
for a lovely crusty finish

Another tip, add some chocolate polka dots
I used to bake a lot...and ate a lot of cake ;)
All the recipes I used came from an old Betty Crocker booklet that had been my mum's. Banana cake was a favourite of mine. As you say, so easy and virtually foolproof.
Used up 3 old eggs & made a litre of delicious creme caramel. Now my worktop is full of ants :(
