I’m looking for the above, and it’s got me wondering what’s the difference between a ‘lemon tray bake’ and a lemon brownie, apart from the chewiness. What makes a brownie different for a chocolate tray bake, in terms of the recipe?

They are described as chewy and fudgey, which is what brownies should be. The cardinal rule with brownies, is never overbake. They need to be very dense and moist still in the centre...they are not risen like a cake. The shape of the tin may also have something to do with the difference.
