So I’ve always wanted to try my hand ay making beef Wellington. I love the idea of moist beef covered in light philo.

But ... I don’t like mushrooms, n husband doesn’t like pate.

Any other ideas of what layer to put between the beef n the pastry?

Onions, bacon, cheese, chestnuts, something along those lines maybe?
I think onions, bacon and chestnuts are things I’d try, not sure if the cheese would be too cheesy.

Someone on a forum recommends haggis! That might work if you like haggis.

Another one...sun dried tomato pesto and very thinly sliced proscuitto for an Italian slant.
Yet another..black pudding and bits of apple.
Yep Eve, I’d enjoy the haggis one too.
I think I’d go with chopped chestnuts mixed with finely chopped onion and bacon or lardons, maybe a touch of grated Parmesan, just a touch.
