How are sugar lumps (ie cubes) made?

heh better late than never! Granulated Sugar or Demerara Sugar is mixed with about 1.5% water and the resulting mixture is compressed into cube shaped moulds. (Think damp sandcastles on the beach). Once compressed, the wet cubes are pushed out onto a steel band (bit like ice cubes), they then pass into a drying oven which removes all water. The cubes after drying are firm and ready to pack.
