Oven Roasted Ratatouille..kind Of

With cauliflower cheese grills this evening.
The ratatouille consisted of four sweet pointy peppers, three large onions, a tin of extra special cherry tomatoes, some fresh cherry tomatoes, a whole garlic bulb split into cloves, olive oil, salt, and mixed herbs. It was absolutely delicious.
All using up what needed using up,I love off the cuff stuff.

Indeed we did, Tilly,I thought I’d posted on the original thread where I asked you about it but I must be dreaming.
It was delicious, we both thoroughly enjoyed it, and because as usual I made far too much for just the two of us, there’s a couple of portions in the freezer.

The kind of thing I would cook.

You can make anything taste nice with the basics. In my house it's garlic, chilli and ginger.

I have just found your post, Vagus. I'm glad that you both enjoyed the pie. You need to buy a six pack of plain crisps next time you make it. :-)
