How's your Saturday going and whats your poison?
And what's amusing your bouche tonight? I need some inspiration as it's an eternity since I actually cooked like I used to.
Chin chin ... your good health ... cheers and all that ...

2 large chunky cod fillets
About 1/4 cup each fine polenta and grated parmesan or grana padano
Ground pepper and chilli flakes
Smoked garlic salt...or just plain salt
Several pinches of chives and oregano
Olive oil and butter
Combine all the dry ingredients in a bowl
Rub a few drops of olive oil on both sides of the cod, then dredge in the dry mixture...press it on a bit.
Heat the butter until foaming, then lay the fillets in the pan. Fry 5 minutes on a medium heat, turn gently and cook about 3 minutes more. I like it with garlicky fine beans and pan fried vine tomatoes.

Hi Naomi, no I haven't tried it. I suspect my mother has. She's a big fan of Aldi's gins.
I quite like the Tanqueray Sevilla at the moment with Elderflower tonic and the Gordon's White Peach Gin is nice too.
I might look out for the lemon one from Aldi.
Thanks, Emmie. Hopefully we'll get finished soon.
