What Goes Well With Rice (Lunch Ideas)

Need some dishes to make for work. Low calorie preferably so I won’t be having too much rice I’ll be making it up with veg

Are these dishes to be eaten cold, like salad, or are you going to be heating them in a microwave? You've not mentioned meat. Is that a possibility or are you a vegetarian?
Rice and kidney beans seems to be just begging to be turned into a chili con carne (or a chile non carne, for vegetarians) but that assumes that you're going to be heating the dish.

I'd be adding some mixed flavoured grains (easy with no preparation)...and eaten hot or cold. For example....

One of my favourite quick snack meals is to add a can of Princes Mackerel Sizzle to half a pack of microwaveable vegetable rice:

(You're meant to heat the mackerel in a frying pan but, if you've only got a microwave at work, I can see no reason why you couldn't microwave it).
You could also use the 'regular' mackerel-in-sauce products, that all supermarkets sell.

If you're going to reheat rice, make sure its cooled quickly and stored in the fridge. Reheat rice until piping hot...which might make any veg go soggy.
That's my food safety rant for today. ;)
You could add olives, sundried tomatoes.
You could have bulgur wheat instead and make tabbouleh...mix it with diced cucumber, tomato, parsley, mint,olive oil, lemon juice.
Or try a middle eastern rice salad...there are many variations using chick peas or lentils plus vegetables.
