I understand from all the recipes I have seen, that I must use good DARK chocolate with 76% cocoa solids to make truffles. Can I buy MILK chocolate that is good and contains 76% cocoa solids, or do I just use good old Cadburys Dairy Milk? Thanks in advance for any help (or indeed any recipes for truffles)

2 egg yolks
25g butter
1 dessert spoon double cream
Crushed choc curls or sprinkles (to decorate)
Melt the choc in a bowl over hot water (bain marie), add the egg yolks, butter and cream. stir until the mixture is thick enough to handle. Cool slightly, then form into balls and roll in choc curls or sprinkles. Place in small paper cases and put into frifge until firm.
Can be kept in an airtight container for up to 3 days.
