Am planning to serve foie gras as a starter on Christmas Day, but can't think of anything exciting to go with it.

Am toying with the idea of a red onion confit and a few red salad leaves, but wondered if anyone out there had any ideas OTHER THAN toast?

If it's the real deal, then you don't really need anything else, perhaps just a few peppery leaves. Also, it can be nice to serve with toasted brioche rather than ordinary toast.
Try balsamic vinegar mixed with raspberry jam, shaken well - delicious with pate.
