Creamy Vegetable Bake

It’s a Sainsbury recipe which I’ve made today. Took longer than I was expecting and made my back ache so I’m hopeful it was worth the effort, it does look and smell very appealing.
I really like one pot meals you can just shove in the oven, which this is, but it needed a lot of chopping, slicing, frying, mixing, etc, prior to shoving in the oven, my back just can’t take it these days.

My back just doesn’t hold up these days and after half an hour, sometimes less, it becomes very painful so I just can’t do it anymore. I really miss spending time pottering in the kitchen..

And the vegetable bake was very, very tasty.
I used a mandolin veg slicer which has been hiding at the back of a cupboard for about ten or more years, in an effort to save time, which it did, and sliced the carrots, parsnips and potatoes very finely. It took a bit of getting used to but was well worth using.
