I had a black pudding yesterday, I couldn't care less what it was coated in it was delicious
Natural sausage casings are increasingly rare. In the U.S., statistics state that only 10% to 15% of all sausages are packed in such. They are more expensive than artificail casings and there are some health concerns, valid or not. Artificial casings are usually made from collagen materials...
Sausage casings are made from either lamb intestine or pork or beef collagen. I'v seen both being produced and I must say I would prefer the collagen ones. Have a look at www.devro.plc.uk
