I do too jourdain, don’t see the point in making just enough for two, for one meal. I currently have three double portions tucked up in the freezer.
Rosie, that’s a really good idea, it’d work well with cold chicken on a sandwich too wouldn’t it?
I only eat eggs if the whites are well hidden. I could just about eat a runny yolk...but the white? Nooo!
For that reason, the eggs have to be VERY well mashed for egg mayo.
