For us, it’s corned beef hotpot which will do us a couple of days. With pickled beetroot and maybe brown sauce, depends on how tasty it turns out.

When we'd had some on day 1 we'd put another 'lid' on it for day 2, obviously smaller and we could make it last almost all week putting a new, smaller lid on each day, always with pickled red cabbage.
It might possibly be pepper stuffed with goats cheese and crispy pancetta. It was originally going to be fishy stuff of some sort...but I had prawns tonight. A reduced pack of Honduran Prawn pil pil from M and S. TBH...I could have done better myself, but at 1/2 price this was cheap.
