Hi I have lots of fresh potatoes and want to prepare them for freezing. Deep Fried or Oven Baked first. Does anybody know how to do it please.? or have a simple foolproof Recipe.? Thanks.
Prepare potatoes as usual, boil for a couple of minutes. Drain and leave to dry. Deep fry or drizzle with oil and put in hot oil.
Drain and leave to cool. Spread on a tray in a single layer and freeze, if your freezer has 'super freeze' use that.
When frozen bag up in portions.
I also freeze mashed potatoes. Great for shepherd /cottage/fish pies and for putting in stews and casseroles. They disappear and act as a thickener.
You can put defrosted mash in to a piping bag and make duchess potatoes, quick and easy.
Or you can use it for croquettes, fish cakes, corned beef hash...
You can also freeze baked potatoes although I've not tried it. Cook as usual, leave to cool, wrap individually in tin foil and freeze.
Take out of freezer, leave in the foil and put in a hot oven until hot. My thinking is that it will take just as long to heat a frozen baked potato as it would to cook from raw.
