This classic buttery French sauce must be cooked slowly with out too much heat. The secret is a dessert spoon of lemon juice and a dessert spoon of white wine vinegar.
Use a crescent whisk, el rapido! It works.
Add some stiffly-whipped cream as you take it off the heat to turn it into Sauce Mouselline
